Community Gardening and Healthy Eating
Studies (like the one conducted by Lackey and Associates) have shown that community gardeners and their children eat healthier, more nutrient-rich diets than do non-gardening families.
Community gardens provide access to fresh, traditional produce and nutritionally rich foods in low-income neighborhoods, where nutritious food is much less available than in other areas. Community gardens have been shown to increase property values in the immediate vicinity where they are located. Community gardens allow families and individuals without land of their own the opportunity to produce food and provide a place for gardeners to share knowledge and skills.
CAE will acquire permission from the Southeast Civic League and other community residents to utilize all or a portion of property located on Thirkield for our students to plant a small community garden. Chef Tiffany Davis will work with our youths on gardening and teach them how to prepare healthy meals. Chef Davis is already working with another group in our community on healthy cooking. Chef Tiffany Davis
Chef Tiffany Davis began her culinary career after working in healthcare policy as both an analyst and freelance editor. She switched careers and won a scholarship to the Culinary Institute of America in Hyde Park, NY and did her internship at the renowned Chez Panisse restaurant, founded by Alice Waters, in Berkeley, CA. She went on to volunteer at Ms. Water's Edible Schoolyard and to teach cooking classes at schools in the San Francisco Bay area through both Cooking Matters and former First Lady Michelle Obama's Chefs Move to Schools initiative. While teaching, Chef Tiffany sat on the board of the Bay Area chapter of the nationwide Cooking Matters program. She also volunteered her services at her church, St. Cyprian's Episcopal Church.
Chef Tiffany moved to Miami, FL to help open the upscale entertainment venue Haven Lounge, then went on to run her own kitchen at another, newly established lounge. She again volunteered her culinary skills at another church, St. John's Episcopal Church in Hollywood, FL. She relocated to Atlanta, GA, where her mother's side of the family resides, and became involved again in Cooking Matters through Food Oasis/Atlanta Community Food Bank and Carver Market/Focused Community Strategies (FCS). She teaches weekly healthy cooking classes for teens, adults, and families at Carver Market. She participates monthly at the Atlanta Underground Market.
Chef Tiffany received her undergraduate degree in psychology from Georgetown University, where she completed a pre-medical curriculum and minored in Spanish. She is a member of Zeta Phi Beta Sorority, Inc. and the National Coalition of 100 Black Women. She sits on the board of the Georgetown University Alumni Club of Metropolitan Atlanta and interviews applicants to Georgetown as part of the Alumni Admissions Program. She is qualified to teach high school English and is proficient in written and oral Spanish. She is also a freelance writer, having contributed sports and human interest articles to Sports Illustrated, Ms. Magazine, and various websites. She has self-published four novels in the fiction, mystery/thriller, and speculative fiction genres.
